Earthy – Aroma

Isobutyl-3-methoxypyrazine

Of all the aromas, this one seems to be the first that I can identify. Not because I have spent a great deal of time smelling “earthy”, at least not that I know of, and yet, upon smelling coffees that have it there is no hiding it. Think of fresh, wet soil. Sometimes I even associate it with the taste of shiitaki mushrooms.

Apparently it is a common flavour note in coffees from Asia like the Indonesian gourmet coffees which typically have a spicy, earthy flavour.

Once you really get into it, apparently you are meant to be able to distinguish 3 grades of earth. From best to worst they are black soil, red soil and grey soil. If I ever get to that level I will be sure to describe it and break them down for you.

Below are coffees that I have detected this Aroma
