Buttery – Flavour/Body

Who doesn’t love a bit of butter. But in coffee? It was a bit of surprise for me when I first heard this one too but it now kind of makes sense. The focus is less on the taste of butter, and more on the mouth feel you get when it is present.

For a full bodied coffee made from beans that contain a high level of fat, a greater than normal level of coffee oil will get suspended in the coffee. When you drink the coffee this oil more fully coats your palate giving that syrupy, rich, lingering buttery feel.

It has been suggested that this is more likely to occur with high coffee-to-water ratio brews, but I think you’d be hard pressed to find out the ratio from your local cafe. More than likely it will either have it or it won’t (got to love the binary world).
