Due to the scarcity of finding awesome coffee in the Northern parts of Sydney, when you find a refuge like this one, it is easy to keep coming back. When I first started coming here years ago, I wasn’t overly impressed. The coffee’s were inconsistent, and the service was a bit dodgy. However the current team of people here are fantastic and it shows.

When it comes to passion, a vital ingredient for any successful cafe (in my books), ensuring that the staff are excited about the developments of coffee, so much so they want to spread that excitement amongst the customers, you are on a good thing. I love coming in here and occasionally have staff geek out about “check out my new custom tamper”, or ” have you tried this cafe yet..”. Even if the coffee was average, that sort of feeling really enhances the entire experience.

However, at this Pablo & Rusty’s the coffee isn’t average. It is pretty awesome to be frank. Of late they really been pushing the various single origins coming through their roaster, and constantly changing it up. Whether you’re after a cold drip or a batch brew, you are going to have a much better chance of enjoying it here.

Today I started with a delicious Ethiopian Yirgacheffe Beloya batch brew which was robust, warm, with a generous amount of a lemony citrus hit towards the end. It had a very peasant mouth feel, so much so that before I knew it is was gone. The only thing that disappeared faster was the Guatemalan Los Caballitos doppio espresso. With a much more aggressive finish, I seemed to be chasing the hit, and then it all mellowed out in the end. I need a bottomless cup of this stuff… 🙂
