What I’ve been drinking – Honey processed Hawaiian Kau

As a brew it started a little woody (light tobacco) and watery, but as it opened up, a delicate acidity and warmth developed. While not overwhelmingly sweet, it was balanced and smooth in the end (perhaps just leaving my tongue a little dry).

As a coffee that comes from a very small harvest, I am glad I got the chance to try it. It certainly is a different kind of balance than I’ve experienced in coffee. Perhaps if it had a bit more of a punch, a bit more robustness, it would have taken it to another level, but overall it was very decent.
